Food Technology Department is conducting research studies on developed horticultural crop by our Institute or all important fruit and vegetable cultivars grown in Turkey and attempt to determine their suitability for processing by using different food preservation techniques. Studies are mainly concentrated on convince of crop to fruit juice, canning and deep freezing. Data were obtained for the uses of food industry at the end of the studies.
Fermentation technology is another research area of the department. Department carry out research to reduce quality loss during processing and to use food additives to increase food quality.
The Department suggests alternative methods to the sector in processing by working on considerably different horticultural crop varieties. On the other hand, research studies can help to reduce of product loss during food processing.
